  1. Bloom: pour 30g in a slow spiral from the center. Let sit 30-40s. (Based on 15g of coffee.)
  2. Pour in a spiral to 120g. Let the water level drop.
  3. Add water to a final total of about 225g.

Storage

Freshly roasted beans need about 7 days to rest, so trapped gas can release and flavor can settle.

After resting: keep beans sealed, dry, away from light, at room temperature.

Best enjoyed within 1–2 months of the roast date.

Resting time counts from the roast date, unopened. About 7 days in warmer months; 10–14 days in colder months, depending on your climate.
